Kamal Mouzawak, que le New York Times qualifie de "food activist" a fondé en 2004 le premier marché bio du Liban où il réunit des fermiers de toutes confessions. Convaincu que la cuisine et ses traditions permettent de dépasser les différences et les divergences politiques et religieuses, il met en avant l'importance de la terre et de ses produits. Depuis 2012, il organise des ateliers de cuisine dans des camps de réfugiés en partenariat avec le Haut-Commissariat des Nations Unies pour les réfugiés.
